Would the future of the culinary industry in Davao City be brighter? What is in store for the food and beverage industry in the coming years? We will try to take a glimpse of Davao’s food scene by enjoying an afternoon of snack buffet with Lyceum of the Philippines Davao – International Culinary Institute Class Butter’s culmination event.
In the recent years, we notice the rise of culinary schools in Davao City and I had the honor to attend a Korean – Japanese snack buffet organized by our future patissiers (pastry chefs) Marie Mae Tacugue, Charisse Penaruya, Shiela Campued, Kristine Denise Sumalinog, and Kimberlie Ann Busalanan.
We had an afternoon of sweet and savory dessert and snack pieces that showcased LPU Davao – ICI’s training and what our future chefs will offer. The theme was Korean and Japanese which meant that we were able to try both street food type and items like mochi, takoyaki, bingsu, japchae with kimchi, strawberry shortcake, and yokan. It was a full-blast event complete with a photo booth, a program with a master of ceremonies, a sakura-themed decor, and even games with raffle prizes.
The event was made with all wonderful effort from the team. It was such a delight to see their passion for the work they do! The fusion of two similar yet different cuisines was creatively done. Taking from experience in the hotel industry, I must say that making a dessert/ snack buffet can be very tricky as some dessert pieces can be so delicate to be done. Considering the humid environment and the awful change of weather that day (it was hot in the morning and it rained heavily in the afternoon), the team made a beautiful event for their culmination.
Just like many events I have attended, there are areas for improvement and a long way to go and learn but I am super excited about the future of the culinary industry in Davao. We can’t wait how our future chefs will do in the real world but seeing how passionate they are in what they do, surely there will be something big in store for us to witness and enjoy.
