What is Omakase?

Omakase is a Japanese dining style where you leave everything to the chef. The word literally means “I’ll leave it up to you.” In an omakase meal, the chef selects seasonal and high-quality ingredients to create a multi-course tasting menu. It’s a culinary journey that highlights precision, balance, and respect for flavor.

About Robata Davao

Robata is a hidden gem in Davao City, known for its robatayaki-style grilling and thoughtfully curated Japanese menu. While their regular offerings are already a hit among Davao foodies, the real secret lies in their private Omakase experience, a 10 to 12-course tasting menu that brings Japanese fine dining closer to home.

Highlights of our Omakase Experience

Here are some standout dishes from our 12-course journey:
Seared Tuna Tataki
A flavorful starter. Lightly seared tuna slices served with a citrus-soy dressing. It’s smoky, clean, and refreshingly bright — the perfect way to awaken the palate. Tataki, by the way, is a Japanese preparation method where meat or fish is lightly seared on the outside but left raw or rare inside, then sliced thinly.

Uni Chawan Mushi
A luxurious twist on a Japanese classic. This savory steamed egg custard is silky smooth and topped with fresh sea urchin (uni), adding briny depth and umami in every spoonful.

Smoked Lamb with Red Miso
Unexpected but unforgettable. The lamb is tender, slightly smoky, and perfectly complemented by the deep, savory notes of red miso. It bridges Japanese technique with bold flavors.

SRF Wagyu
A showstopper. Snake River Farms Wagyu beef, seared and seasoned to perfection. It melts in your mouth with rich marbling and buttery texture. Decadent, yet balanced.

Each course was meticulously plated, offering a mix of raw and cooked dishes, fresh seafood, and seasonal ingredients that reflect Japanese craftsmanship.

Final Thoughts on Robata Omakase

Palate
Robata’s Omakase excels in harmony and contrast. From the delicate flavors of the Tuna Tataki to the richness of the Wagyu, every course builds upon the last. It’s a well-paced meal that respects both ingredients and the diner. Chef Alexander has executed a wonderfully prepared experience that I would highly recommend.

Place
Robata is cozy and intimate with limited seats and a private room for omakase guests. It doesn’t have a CR inside the dining area, but the space feels exclusive and thoughtfully designed. Reservations are a must as it gets fully booked quickly.

Price
At Php2,499 per head, this 12-course omakase is a steal. We skipped wine and alcohol, but the food alone made the night unforgettable. It’s a great way to explore authentic Japanese fine dining without flying out of Davao.
